Following Italian familial traditions, Giusy Romano was introduced to wine from a young age. She attended courses at the AIS (Italian Sommelier Association) just after finishing high school, first in Naples and then in Rome, where she experienced her first real approach to fine dining thanks to the partnership between the AIS and the Heinz Beck’s restaurant La Pergola. Her passion for wine and food prompted her to travel far and wide in Italy and abroad and to collaborate with many Michelin-starred chefs; as Giusy maintains “the small challenges sparked by human relationships always help us to grow and better ourselves.” Our Head Sommelier and Experience Manager’s wine list is a breath of fresh air in Puglia; a complete and tailored selection that comes from the research of small producers and native grape varieties
